MNT (Medical Nutrition Therapy) for Diabetes

The usual understanding is that when you eat foods rich in sugar or refined carbohydrates like cakes, donuts or cookies, your blood sugar will rise rapidly.   That is true but this is not the cause of diabetes according to the recent studies.   The cause is also a high fat diet! Insulin circulates and arrives at muscle cells from the pancreas where the glucose can be used for energy or stored.  However, if the muscle cell is toxic with fat droplets, the insulin does not as readily initiate a series of steps- this delay is removing glucose from the blood is known as insulin resistance.   The focus on the cause of type 2 diabetes has shifted to fat content of the diet.   I’m not totally against the meat…but if you have diabetes or prediabetes, you might consider WFPB (Whole foods plant based) diet and lower fat intake (less than 10% of total calorie, or 30g of fat intake per day).  Reduce meat consumption.  For example, 3 oz of chicken (about 85g), it contains 12g of fat, while beef contains 13g of fat.

Fat includes also plant based source such as avocado (30g fat: 4.2 g of saturated fat, 20g of monosaturated fat, 3.6 g of polyunsaturated fat).  I personally love avocado but again if you have diabetes or prediabetes, you might also consider and be mindful how much fat you eat in your diet.
